check it outttt! quail eggs. my friend was planning on making ravioli this weekend and i made sure he picked up some quail eggs to put in the filling…i’m talkin little quail yolk right on top of some cheezy filling so when you cut it open there’s runny yolk there too…sort of like an extra sauce inside the ravioli.
well he had already made the dough and a couple ravioli fillings (one with ricotta/parm/parsley/sherry and the other with ricotta/parm/sausage/broccoli rabe) & we stopped by mostly to help with the assembly. separating those little eggies AND keeping the yolk from breaking was quite the challenge, there was some success and one supreme cooking video came out of it
